Baked Quinoa Chicken Nuggets

Ingredients
450g chicken breasts, cut into chunks
185g cooked quinoa
1 egg, beaten
4 tbsp grated Parmesan cheese
1 tbsp dried herbs of choice
Instructions

Preheat the oven to 350°F (180°C).

Spread cooked quinoa on a parchment-lined baking tray. Bake for 20–25 minutes, stirring occasionally until crispy. Remove and allow to cool.

Increase oven temperature to 390°F (200°C).

In a bowl, mix beaten egg, Parmesan cheese, and dried herbs.

Dip chicken chunks into the egg mixture, then coat with the baked quinoa.

Arrange on a parchment-lined tray.

Bake for 15–20 minutes, or until cooked through.
