Baked Quinoa Chicken Nuggets

Baked Quinoa Chicken Nuggets

Ingredients

  • 450g chicken breasts, cut into chunks
  • 185g cooked quinoa
  • 1 egg, beaten
  • 4 tbsp grated Parmesan cheese
  • 1 tbsp dried herbs of choice

Instructions

  1. 1Preheat the oven to 350°F (180°C).
  2. 2Spread cooked quinoa on a parchment-lined baking tray. Bake for 20–25 minutes, stirring occasionally until crispy. Remove and allow to cool.
  3. 3Increase oven temperature to 390°F (200°C).
  4. 4In a bowl, mix beaten egg, Parmesan cheese, and dried herbs.
  5. 5Dip chicken chunks into the egg mixture, then coat with the baked quinoa.
  6. 6Arrange on a parchment-lined tray.
  7. 7Bake for 15–20 minutes, or until cooked through.
