1.Beat the eggs and water in a bowl. Season with salt and pepper.
2.Heat oil or butter in a pan over medium heat. Add enough egg mixture to make a thin omelette. Cook until set, then keep warm under foil. Repeat to make four omelettes.
3.Finely chop basil and mix with cottage cheese. Add pepper to taste.
4.Quarter the cherry tomatoes.
5.Divide the cheese mixture and tomatoes among the omelettes. Roll each omelette tightly.
