Easy Salmon Spring Rolls

Ingredients
4 sheets rice paper
Fresh coriander
200g salmon, cut into 4 pieces
1 tbsp coconut oil
2 tbsp tamari, for serving
Instructions

Boil a small amount of water and remove from heat.

Dip each rice paper sheet in the water for 30 seconds, then lay flat on a damp cloth.

Place coriander leaves, salmon, and black pepper on each sheet and roll tightly.

Heat coconut oil in a pan over medium heat.

Fry rolls for 2 minutes on each side until golden brown.

Transfer to a paper towel to drain.

Serve with tamari and a side salad if desired.
