High Protein Chicken Salad

Ingredients
450g cooked chicken breast, sliced
70g white cabbage, shredded
70g red cabbage, shredded
1 red bell pepper, finely sliced
1 large carrot, grated
6 radishes, finely sliced
100g bean sprouts
3 green onions, finely sliced
4 tbsp chopped coriander
3 tbsp toasted sesame seeds
30g chopped almonds
Dressing
4 tbsp tahini
4 tbsp water
4 tbsp lemon juice
1 garlic clove, minced
1 tbsp honey
Instructions

Blend all dressing ingredients in a food processor until smooth and creamy. Set aside.

In a large bowl, combine chicken, cabbage, bell pepper, carrot, radishes, bean sprouts, green onions, coriander, sesame seeds, and almonds.

Pour dressing over the salad and toss until evenly coated.

Serve immediately or refrigerate for later.
