Plant-Based Crème Brulee

Ingredients
1 vanilla pod
200ml full-fat canned coconut milk
400ml unsweetened almond milk
4 tbsp brown sugar
2½ tsp agar-agar
Instructions

Split the vanilla pod and scrape out the seeds. Set both aside.

Combine coconut milk, almond milk, half the brown sugar, agar-agar, and vanilla seeds in a pot.

Bring to a boil while stirring frequently. Remove from heat and cool to room temperature.

Discard the vanilla pod. Pour mixture into 4 dishes and refrigerate 1 hour until set.

Sprinkle remaining brown sugar over each dish and caramelize with a kitchen torch until golden and bubbly.
