Plant-Based Crème Brulee

Plant-Based Crème Brulee

Ingredients

  • 1 vanilla pod
  • 200ml full-fat canned coconut milk
  • 400ml unsweetened almond milk
  • 4 tbsp brown sugar
  • 2½ tsp agar-agar

Instructions

  1. 1Split the vanilla pod and scrape out the seeds. Set both aside.
  2. 2Combine coconut milk, almond milk, half the brown sugar, agar-agar, and vanilla seeds in a pot.
  3. 3Bring to a boil while stirring frequently. Remove from heat and cool to room temperature.
  4. 4Discard the vanilla pod. Pour mixture into 4 dishes and refrigerate 1 hour until set.
  5. 5Sprinkle remaining brown sugar over each dish and caramelize with a kitchen torch until golden and bubbly.
