Protein Strawberry Muffins

Protein Strawberry Muffins

Ingredients

Dry

  • 120g oat flour
  • 4 tbsp vanilla protein powder
  • 1 tbsp lemon juice
  • Zest of ½ lemon
  • 2 tbsp stevia
  • ½ tsp baking soda
  • Pinch sea salt
  • Pinch cinnamon

Wet

  • 1 tbsp coconut oil, melted
  • 100g egg whites (about 3 eggs)
  • 2 tbsp unsweetened almond milk
  • 125g non-fat Greek yogurt
  • 1 tsp vanilla extract

Add-ins

  • 100g strawberries, finely chopped
  • 4 tbsp 75% dark chocolate, coarsely chopped

Instructions

  1. 1Preheat oven to 350°F (180°C).
  2. 2Combine all Dry ingredients in a large bowl.
  3. 3Mix all Wet ingredients in a separate bowl until smooth.
  4. 4Gradually stir the wet mixture into the dry ingredients.
  5. 5Fold in strawberries and most of the chocolate, reserving some for topping.
  6. 6Line a muffin tray with liners and spray lightly with oil.
  7. 7Divide batter evenly and top with reserved chocolate.
  8. 8Bake 23–25 minutes until set and lightly browned.
  9. 9Cool in the tray 10 minutes, then transfer to a rack.

Storage

Store in an airtight container 1–2 days at room temperature or 5–7 days refrigerated.
