The Best Sweetcorn Fritters

Ingredients

  • 280g sweetcorn (drained)
  • 1 bunch coriander, chopped
  • Zest of 1 lemon
  • 120g buckwheat flour
  • 185ml cold water
  • 4 tsp coconut oil

Instructions

  1. 1.In a large bowl, combine sweetcorn, coriander, and lemon zest. Season with salt and pepper.
  2. 2.Stir in buckwheat flour and water until smooth.
  3. 3.Heat coconut oil in a non-stick skillet over high heat.
  4. 4.Ladle the mixture into the pan, cooking in batches of four fritters, using about ½ tsp oil per fritter.
  5. 5.Cook each fritter for 2–3 minutes on each side until browned.

One fritter equals one serve.
