The Best Sweetcorn Fritters

Ingredients
280g sweetcorn (drained)
1 bunch coriander, chopped
Zest of 1 lemon
120g buckwheat flour
185ml cold water
4 tsp coconut oil
Instructions
1.
In a large bowl, combine sweetcorn, coriander, and lemon zest. Season with salt and pepper.
2.
Stir in buckwheat flour and water until smooth.
3.
Heat coconut oil in a non-stick skillet over high heat.
4.
Ladle the mixture into the pan, cooking in batches of four fritters, using about ½ tsp oil per fritter.
5.
Cook each fritter for 2–3 minutes on each side until browned.
One fritter equals one serve.
